Our Story

A small-batch grower, not a distributor.

Shropshrooms began as a spare-room trial in Cleobury Mortimer and is growing into a dedicated indoor cultivation operation supplying gourmet oyster mushrooms across Shropshire, including Ludlow. Every block is grown, monitored, and harvested by hand, so the mushrooms that reach a kitchen or market stall were still on the shelf a day, or sometimes only hours, before.

I’m Dylan Griffiths, the founder of Shropshrooms. I come from a corporate technology marketing background, but I started Shropshrooms to get back to nature — and to help give other people genuinely high-quality, nutritional food. There’s something grounding about growing something real with your hands, and I want to share the best of it with my local community.

The Mushroom

Blue Oyster (Pleurotus ostreatus)

Our core variety is the blue oyster mushroom: fan-shaped clusters with a firm bite, mild savoury flavour, and a texture that holds up well to searing, roasting, and pan-frying. Each block is grown to a natural two-flush cycle before the substrate is retired to local composting.

  • Grown indoors in a climate-controlled fruiting environment
  • No pesticides or chemical treatments used at any stage
  • Hand-harvested at peak cap firmness, before spore drop
